Once roasted in olive oil and seasoning, these chickpeas become crispy and easy to eat by the handful. It takes hardly any time or effort at all to elevate your chickpeas into a tasty snack or topping for salads and pastas, and they are super healthy, too.

  • 2 cups cooked chickpeas
  • 2 tbsp extra virgin olive oil

How to Roast Chickpeas // The Steps

Step 1: Preheat the oven to 400°F and line a baking sheet with parchment paper.

Step 2: Clean the chickpeas in cold water to remove any loose skins. Drain the chickpeas and transfer them on a kitchen towel to remove excess water.

Step 3: Transfer the chickpeas to the prepared baking sheet, then toss them with the olive oil, half of the paprika powder, and season with a pinch of sea salt.

Step 4: Once the oven is hot, bake the chickpeas for 20 minutes or until golden brown.

Step 5: Remove the chickpeas from the oven and toss with the remaining paprika powder and mint leaves.

I use paprika, salt, and mint, but you don’t have to stick with this method! Try out some other flavors and see what works best for you.

  • Spicy chickpeas: Toss your chickpeas in cayenne pepper, chili powder, paprika, or your favorite spicy seasoning to bring some heat to your snack.
  • Barbecue chickpeas: The best flavor of Corn Nuts! Mix some barbecue seasoning blend with your chickpeas, or if you are feeling adventurous, some barbecue sauce. You might not want to eat them with your hands, though.
  • Parmesan and herb chickpeas: Oregano or basil pair amazingly with grated Parmesan cheese and garlic powder or garlic salt.

Should I use fresh or canned chickpeas?

You can use either, just as long as they have been cooked. If you are using canned, be sure to rinse them off thoroughly before you roast them.

How do I know when the chickpeas are done?

This can easily be checked by cutting or biting into a chickpea. I wouldn’t recommend roasting them for less than 20 minutes. If they are still not crispy, slightly starchy, or aren’t golden in color, keep cooking at check them at 5 minute intervals.

How to Store Roasted Chickpeas //

When stored properly, your roasted chickpeas should last up to 2-3 weeks. Simply let them cool, then place them in a clean and dry airtight container, ensuring it’s sealed tightly. If you have desiccant packets to absorb moisture, you can put one or two in the container as well to preserve the freshness of your chickpeas. Keep them in a cool and dry place like your cupboard or your pantry, out of direct sunlight.
