If you’ve ever struggled to think of new ways to prepare gulay or need new recipes to try, Juana Manahan Yupangco of Mesa ni Misis, offers a few helpful tips:

1 Season veggies as you would season your meat.

Spices can do wonders and it gives your veggies new flavor profiles, too. Raid your spice cabinet or get a new spice to try. There are endless possibilities to turmeric, paprika, or even the bagoong or gata you may have in your kitchen.

2 Find veggies that are nutrient-dense.

If you are looking to make veggies your main source of protein, go for the ones that are packed with nutrients. Monggo has the highest protein content and you can even use monggo in your kare-kare (just make your usual kare-kare sauce!).

3 To make veggies last longer in storage: don’t wash them until you will use them.

One of the biggest challenges households face is that gulay often goes bad even before they are used in dishes. Juana recommends not washing the veggies until you’re ready to use it. You may also use cloth bags to absorb moisture when storing in the refrigerator.

Now, you can find her creative vegetable dishes in a new cook book, “Mesa Ni Misis: A Guide to Cooking and Enjoying Native Filipino Vegetables.” The cook book has 40 easy veggie recipes, all using local vegetables, and dishes are priced at P250 to P350 each. You can even find recipes for noodles, desserts, and drinks.

It was important for Juana to keep the cost of ingredients low because Mesa Ni Misis partners with various schools and institutions to spread the word that eating healthy is affordable, nutritious, delicious, and accessible.
