1 Season veggies as you would season your meat.
Spices can do wonders and it gives your veggies new flavor profiles, too. Raid your spice cabinet or get a new spice to try. There are endless possibilities to turmeric, paprika, or even the bagoong or gata you may have in your kitchen.

2 Find veggies that are nutrient-dense.
If you are looking to make veggies your main source of protein, go for the ones that are packed with nutrients. Monggo has the highest protein content and you can even use monggo in your kare-kare (just make your usual kare-kare sauce!).

3 To make veggies last longer in storage: don’t wash them until you will use them.
One of the biggest challenges households face is that gulay often goes bad even before they are used in dishes. Juana recommends not washing the veggies until you’re ready to use it. You may also use cloth bags to absorb moisture when storing in the refrigerator.
